The wild boar ragu is from the Osteria Del Cinghiale Bianco, the famous restaurant that is a stone’s throw from the Ponte Vecchio in the heart of Florence. We were lucky enough to have had dinner at the Osteria recently where we met Marco Masselli, the second generation proprietor of this wonderful Florentine restaurant that was featured in Stanley Tucci’s highly acclaimed television series ‘Searching For Italy.’ Wild boar ragu with pappardele is one of the Osteria’s signature dishes. We thought it was so special we decided to bring a little bit of Florence back to Dorset! Produce of Italy. In an airtight jar. Eat within 12 months. Once opened eat within 3 days. Serves 2 people.
